Sapphire Chicken is getting ready to hit the road, bringing hand-breaded crispy chicken, hearty breakfast favorites, and bold flavors to communities throughout the Bitterroot Valley, including Corvallis, Hamilton and Stevensville.

Our goal is simple: serve great food and become a gathering place for our neighbors. Whether you're grabbing breakfast on the way to work, stopping by for lunch, or finding us at a local farmers market or community event, we're committed to serving fresh, flavorful food made with quality, locally sourced ingredients whenever possible.

As we prepare for opening day, we're putting the finishing touches on our menu, our truck, and everything that goes into creating a memorable experience. From crispy chicken tenders and crave-worthy sandwiches for breakfast and lunch and house-made sauces, we can't wait to share what we've been creating.
